Taiwanese Rechao 熱炒

The Chinese characters 熱炒 mean "hot stir-fry" and the food is much of what makes Taiwan's cuisine today, from local seafood and vegetables, to Taiwanese takes on Chinese and Japanese food. It's a rowdy time with low tables, even lower stools, and lots of Taiwan Beer.

Some dishes from Baxian Grill (八仙炭烤) in Taipei, Taiwan, clockwise from top right: fried burdock root, gong pao chicken, green beans, stinky tofu (steamed and served in aluminum foil 😱), eggplant, fried rice, fried snails, pork liver, shrimp, rice noodles, clams, and fish.
